
This post is dedicated to all my girlfriends who are busy moms, like Eliza and Kim, who love the idea of hosting but find that making holiday snacks and goodies are last on the list.
Here are two new less mess recipes that can be put together in under 20 minutes each. The banana bites are the skinny version of a treat my granny used to make for her card parties. The chocolate peanut butter dips are my lighter version of my cousin Autumn’s recipe that she brought to our Thanksgiving dinner this year.
Makes about 16 bites
1/2 cup sweetened flaked coconut
2 ripe bananas
1 teaspoon cinnamon
1 teaspoon granulated sugar
1/2 cup low fat sour cream
Preheat the oven to 350°F. Coat a large cookie sheet with non-stick spray. Spread out the coconut on the cookie sheet. Bake 8 to 10 minutes, stirring once until the coconut is toasted. Slice the bananas into 16 1/2-inch slices and spread them out on a sheet of waxed paper. Mix the cinnamon and sugar in a small bowl. Place the sour cream in a shallow bowl. Dip each slice of banana in the cinnamon sugar first and then in the sour cream. Press to coat with coconut. Transfer to a plate or platter and press a toothpick into each banana and serve immediately.

Makes 12 sandwich cookies
24 reduced fat butter crackers, such as Ritz brand
6 teaspoons of reduced fat peanut butter
1/4 cup bittersweet chocolate morsels
3 tablespoon skim milk
Spread 1/2 teaspoon peanut butter onto half of the crackers. Top with another cracker to form a sandwich and place on a large sheet of wax paper. Place the chocolate morsels and milk in a small sauce pan and place it over low heat. Warm for about 1 minute, stirring continuously until the chocolate is melted and the mixture is smooth. Dip the cracker sandwiches into the chocolate and transfer to the sheet of wax paper. Enjoy ooey, gooey warm or cool on the wax paper 4 to 5 minutes until the chocolate has hardening. Store in an air tight container for up to three days.
