Flavor Your FishMany people love to eat fish, but feel stuck when it comes to cooking it for themselves and figuring out how to top it. Why not “flavor-boost” your fish next time around with one of my four fast and easy sauces?

Throughout Secrets of a Skinny Chef, now available in stores and on Amazon, Barnes and Nobles, Borders and IndieBound, I highlight several recipes featuring fish – in part because cooking fish is super-fast, and makes for an easy, quick meal that you can serve with flavorful fresh sauces.

If it’s in your budget, try wild salmon, which is naturally high in omega-3’s for an extra dose of goodness. If not, go for tilapia instead – it’s inexpensive, easy to find and has a white, flaky texture that most people love. As many foodies feel that tilapia’s non-descript taste demands flavorful sides and sauces, I decided to feature recipes for four sauces in a recent post on Slashfood:

  • Chunky Gazpacho Sauce
  • Grapefruit-Olive Sauce
  • Peppadew Orange Sauce
  • Chipotle Tomato Sauce

Here’s how to prepare the fish: Preheat your oven to 400 F. Simply coat the fish with a light layer of olive oil spray and a pinch of salt and pepper. Place in a glass baking dish and bake for 10 to 12 minutes until the fish flakes with a fork. Top with a scoop of sauce and serve immediately.
