Skinny Chef's Hot WingsMaking tweaks to my healthy recipes is a great way to put your own special spin on a meal and enjoy eating healthy foods! Check out this suggestion from faithful reader and friend Albert….

“In regards to your wings recipe, I add a dry rub of coriander, garlic powder, chili powder, black pepper and cayenne pepper to the chicken. Instead of the Tabasco sauce for the heat, I use a very finely diced jalapeno or habanero pepper mixed into the sauce. The seeds removed and the white veins removed for less heat. I did this because I don’t like the flavor of the Tabasco on my food.”

“For the battered catfish, instead of using the whole filets, I cut them into nuggets. My nieces and nephews don’t like fish, but when I served these, they thought they were eating chicken nuggets. When baking, make sure there is plenty of space between the nuggets on a rack so they are crispy and not steamed. The first time you cook them, keep an eye on them and remove them from the oven when they just turn golden brown – then cool for 10 minutes and enjoy.”
