Last week, I prepared my poolside soup for a meeting with the editor from Hoboken Digest. I had a few perfectly ripe, luscious Hass avocados resting in my fruit basket, so I decided to use them as an incredibly creamy, smooth, mineral-rich base to base my lunch meal on. Here are some other ideas to enjoy avocado…
Make a Topping for Fish or Chicken
Make my grapefruit olive salsa with avocado to serve with chips or simply spoon over grilled fish or chicken. Or add this flavorful, juicy salsa to boost the flavor in that boring turkey wrap…
Fast and Tasty
Spoon two tablespoons of your favorite tomato salsa over one half of a ripe avocado. Or sprinkle with a pinch of salt and ground cumin, then spritz with a few wedges of lime and dig in. Craving Asian flavors? Just sprinkle with a little low sodium soy sauce, chopped ginger and garlic, or top with a teaspoon of your favorite hoisin sauce.
Lunch is On
Fill one half of a whole wheat pita with a few slices of cooked, nitrate-free turkey, half a sliced avocado, and one tablespoon of spicy lime mayonnaise, and chopped romaine. Or add avocado along with my spicy peanut sauce (from my Kitchen Daily Blog) drizzled over steamed veggies and brown rice bowl.
