Entertaining is one of the many ways I celebrate and enjoy eating healthy meals. Sharing something delicious that is also nourishing can be a great way to gather friends and family around the dinner table without too much fuss in the kitchen.
Tasty Nibbles for Parents with Small Children
Just bread the fish fingers the night before, and place them on a plate with sheets of wax paper in between each level. Resting breaded chicken, fish, and vegetables in the fridge can help to keep the breaded coating from falling off when you brown them in the skillet. Buy a prewashed salad mix. Add a tray of English muffin pizzas that just take minutes to prep and you have a full table of healthy, finger foods.
Fiesta Night for the Whole Family or a Group of Friends
Fill out your table with a Mexican fiesta, including Tacos, Refried Beans, and Grilled Flank Steak. You can make the taco meat and the refried beans recipe the night before and just fill the tacos and warm to serve. Thinly slice freshly washed romaine lettuce and wrap in a paper towel. Crisp in the fridge in a zipper lock bag up to a day before you’re ready to use. Grill off the steak an hour before you’re ready to sit down to serve the meal for a filling, south of the border treat.
Cozy Dinner for Two
Start the night with a special drink, Kir Royal, that is both pretty and elegant. Next, serve fish in parchment paper. If you want to prep the packet the night before, use aluminum foil instead of parchment, the baking time stays the same. Pre-bake a luscious twice baked sweet potato with munster and jalapenos and just top with the cheese. Bake along with the fish 12 to 15 minutes until the cheese is melted and the fish is cooked.
