Skinny Chef on NBC’s LX New York

In this segment, which aired live on Monday, January 25, 2010 on NBC’s LX New York At Five, I showcased two quick and healthy recipes with host Sara Gore.

Everyone always wonders what makes these chicken finger so crisp and special. I coat them with a mixture of cooked quinoa and whole-grain breadcrumbs. It’s a healthy twist that kids love and adults request. Quinoa, a seed from South America, can be found in health food stores and even in some national grocery chains. It is a cinch to cook and takes only 15 minutes on the stove top.

While Sara tended to the chicken, I tossed together a super-fast side dish that is the ideal match for chicken: garlic broccoli. Broccoli drenched in fresh lime and seasoned with garlic and ginger will be a hit for anyone who loves Chinese take-out. And to make this dish even faster for weeknight cooking, make the sauce ahead and store it in the fridge.

  • Broccoli with Garlic Sauce
Most kids love Chinese take-out and will gladly eat broccoli. I make this for the “big kid” in my life – my husband. He hates veggies, but he coo-coo for Asian flavors that perk up this crisp tender, nutritional packed veg!
  • Quinoa Chicken Fingers
Chicken fingers are always a hit for kids but grown-ups will love this version with the added nutrition that quinoa provides. I tested these out on my “big kid” (my husband) as well as my friend Chad’s seven year old son, Luke.
