Scalloped potatoes are one of my favorite fall and winter dishes. Just the smell of them transports me back to my Granny’s kitchen where she always had a pairing knife and cutting board handy, ready to chop vegetables for her home-cooked meals.

Pumpkin Bread Pudding

Cherry Upside-Down Cake
As a kid, I hated upside down cakes covered with masses of sticky glazed pineapple. Feared by many, it always popped up on buffet tables at family gatherings. I’ve never been a big fan of canned fruit since, so my upside down version is made with a thick, rich homemade filling of fresh cherries that is simple and superb.

My granny always had so much leftover zucchini in her garden, it was a challenge to use it all. Zucchini is very high in water and fiber content. Parchment-Wrapped Fish
Parchment paper sounds fancy, but it’s really just paper you can use in baking. I use it to construct a little paper bag to make an ultra healthy, super fast fish bake that is a tradition in French cuisine. You can always use aluminum foil in its place, however fish always tastes better to me cooked in parchment.
