Turkey Chili

This turkey chili makes a tasty, high-protein meal, because it’s made with lean ground turkey. Get creative with the topping, a tablespoon of your favorite cheese, salsa, or sour cream. Beans add a good dose of fiber but if you want to ramp up the nutrition even more, add a handful of your favorite green, such as kale or spinach during the last minute of cooking.

Gluten-Free Lasagna

This is no ordinary lasagna, it’s gluten-free and fortified with two of my favorite superfoods, mushrooms and kale. Gluten-free diets can be unhealthy when you don’t include veggies, but this one dish meal has it all.

Simple Chicken Broth

Making your own chicken broth takes extra time but the flavor is worth the bother! A lot of commercial brands contain ingredients you don’t bank on when making a homemade meal — like artificial colorings, MSG, and gluten.

Scalloped Potatoes

Scalloped potatoes are one of my favorite fall and winter dishes. Just the smell of them transports me back to my Granny’s kitchen where she always had a pairing knife and cutting board handy, ready to chop vegetables for her home-cooked meals.

Cinco de Mayo Menu

I’ll take any excuse to celebrate with food and friends, so I’ll enjoy Cinco de Mayo every year. The best (and healthiest) way to celebrate is to throw a potluck bash, simply let your guests choose one recipe from the menu to prepare. Plan to have one drink out at the beginning of your celebration or end your evening in your favorite local watering hole so you won’t be accused of being a home body!
