Every family has a favorite fudge recipe. This fudge still has that chocolately, rich smoothness but is much lower in saturated fat and a snap to make, no candy thermometer necessary.
Serves 6-8
1 cup granulated sugar
4 ounces bittersweet chocolate, chopped
3 tablespoons trans-fat free margarine
1 cup non-fat cream cheese, room temperature
1 tablespoon corn syrup
1 tablespoon vanilla extract
1 cup chopped, roasted pecans, (optional)
non-fat cooking spray
Coat an 8 x 8-inch pan with cooking spray. Melt the chocolate in a microwave 1 to 1 1/2 minutes until the chocolate is just melted. In a large bowl, combine remaining ingredients and stir until smooth. Stir in chocolate and pour into baking pan. Chill until firm about 2 hours. Cut into squares and serve.
Serve with Buttermilk Chicken or Corn Bake.
