Meatloaf isn’t pretty to look at, but it’s funny how many people just love it all the same. When I was a kid, I actually preferred the leftovers. It made the best sandwiches and always seemed more moist and flavorful after a night in the fridge.
Serves 6-8
1 pound ground sirloin or ground turkey
4 slices of whole wheat bread, crust cut off, cubed
2-3 cloves of garlic minced
1 egg white
1/8 cup of low-sodium soy sauce
1/4 cup non-fat, skim milk
1/4 cup minced parsley
1/4 cup ketchup or BBQ sauce
Preheat oven 350° F. Place bread into large bowl and soak with milk and soy sauce. Break up the bread with your fingers until the mixture is very smooth. Add egg, meat, garlic, and parsley. Mix well.
Spray a loaf pan with cooking spray and smooth meat mixture into pan. Top with ketchup or BBQ sauce.
Bake for 45-50 minutes, until the meatloaf is no longer pink in the center, test by inserting a knife. Allow to rest 5-10 minutes before slicing.
Serve with Zucchini Boats, Broccoli with Garlic Sauce, Sweet Potato Mash.
