The Secret to My Sauce

I made pizza topped with homemade sauce for my friend and agent extraordinaire this last Winter. It was a real compliment when she told me it tasted exactly like her Aunt’s famous Italian sauce. But every time I tell people about ‘the secret ingredient’, they seem to be surprised.

Meatloaf Stuffed With Spinach

Meatloaf is one of those blue-plate specials that is still on my list as a comforting, satisfying meal that’s perfect for winter weeknights. I like to shake up the flavor by adding new ingredients, or even stuffing it with something surprising, like gooey mozzarella and fresh baby spinach.

Black Bean Quesadillas

The very first steamy bowl of black beans soup drenched in plenty of fresh lime topped with a dollop of sour cream started a love affair with black beans that has never stopped. There is something about a hearty bowl filled with satisfying creamy beans.

Getting More Grapefruit

It’s easy to make healthy eats taste great when you cook with seasonal ingredients. Grapefruit is a wonderful example, and you’re in luck because it’s in season right now. Why not try my Grapefruit Bellini or Teriyaki Salmon Skewers?

Quinoa Risotto

Risotto is prized for its creamy texture and rich taste. Quinoa is naturally creamy and makes a lighter, whole grain version of this popular Italian comfort food. Spinach adds extra nutrition and flavor.

Shredded Beef

This flavorful shredded beef can be cooked ahead and added to your favorite dish. I like to use it for burritos, tacos, and enchiladas

Turkey Bolognese

I love Parmesan but if you’re on a tight budget tangy Romano cheese is an ideal substitute at half the price. I use reduced fat cream cheese in place of heavy cream that usually appears in the traditional version.

Tacos

Make your taco meat ground turkey and add grated carrot and tomato for extra flavor and nutrition. Buy grated part-skim mozzarella in bulk – it is the most versatile cheese and you can use in almost any recipe and is several grams lower in fat than cheddar. Great way to use up left over cherry tomatoes, lettuce, and extra salsa that lingers at the bottom of the jar.
