Grilled Eggplant with Miso Dressing

Miso is a savory fermented paste made from soy beans, rice or barley. There are many different varieties on the market, ranging from light to dark, depending on how long they are aged. Look out for the low-sodium variety, since this thick, peanut butter looking paste can be quite salty.

Chocolate Sour Cream Icing

Hands down, this smear beats the plastic tub icing that comes from the grocery store. Easy to spread, it works on almost any cake and is ideal for icing cupcakes.

Spinach Strawberry Salad with Poppy Seed Dressing

Sweet and tangy poppy seed dressing works with any salad but is especially good with summer ripe strawberries and nutrient-packed spinach. Ideal for an outdoor summer or late spring brunch.

Chocolate Sorbet

Low in fat but high in cocoa powder, this bittersweet chocolate sorbet is for true chocolate lovers only. Spread it between two low-fat grahams to make it into an ice cream sandwich.

Red Velvet Cheesecake with Beets

Traditional red velvet cake calls for tons of red food coloring dye. My version uses beets to color this cheesecake naturally while adding extra nutrition

Cherry Peppers Stuffed with Mozzarella and Basil

I love the sweet and hot flavor of pickled cherry peppers, ideal for preparing quick and tasty appetizers. You can find them in the deli case of most grocery stores or in a specialty Italian deli. They are great to have on hand to enliven salads, sliced into steamed broccoli and cauliflower or to tuck into a hearty sandwich.

Bitter Frenchie

The tang of bitters is just the trick to get your mouth watering before dinner. I serve this to guests when I pull out the martini glasses and turn on the jazz!

Spiced Hot Cocoa

This low-fat version of hot cocoa has a Mexican twist! I add lots of spices and a hint of chili pepper to give it that extra warm flavor.
