Chipotle Calamari Salad

Seafood SafetyWith the growing concerns over mercury and seafood sustainability, it’s hard to know how to enjoy seafood responsibly. You can download this handy pocket guide to take along as you shop so that you don’t have to remove seafood completely from your summer cookout menu.

Farmed tilapia and catfish both happen to be on the sustainability list along with squid, and all three are low in mercury. If you’re a shrimp lover like me, squid could be a respectable substitution for you due to the recent oil spill in the Gulf of Mexico that will certainly affect supply.

Most people either love or hate squid, also known by its Italian name “calamari” – which Americans know as a deep-fried version that is anything but healthy. Properly cooked squid, minus the breading and deep frying, can be a tender, mild tasting meat from the sea that is super low in fat and calories. Just four ounces, about 3 pieces of squid is about 100 calories! The trick is to cook it right and sauce it with hearty flavors, like chipotle for example.
