Volkswagen Superbowl Commercial

I just saw this brilliant and adorable Volkswagen commercial that the company is “sneak peeking” before my team, the Steelers, pound their opponents into the ground this weekend. It’s cute for sure – with a little boy dressed as Darth Vadar, trying to use his Jedi mind powers on that baby doll.

My husband was born and raised in Germany – he just doesn’t “get” Star Wars, so I don’t think it had the same effect on him. And when I forced him to watch it last summer, as part of his cultural education – he didn’t even cheer when Luke destroys the death star. No matter, Volkswagen was smart to use that reference because it really hit home for me.

Didn’t every girl of my generation want to be Princess Lea, or at least dress up like her? They even have a costume complete with the “dual buns at the ears” wig for your dog – that’s how much we love it.

The other thing that hit home was watching the mom push over the peanut butter and jelly sandwich to her little “Darth in training”. I think I saw a flash of white-as-can-be bread, standard peanut butter, and super sweet jelly. No wonder Darth doesn’t rule the universe, he needs more nutrition!

Peanut Butter Spread and Jelly on Toast

Serves 4

Everyone loves the sweet-and-salty combo of peanut butter and jelly. I figured out a way to add more nutrition to this classic while cutting back on fat. This “jam” is made without the zero-nutrition high fructose corn syrup commonly found in commercial products; plus I added whole grains, omega-3 fatty acids from the flaxseed, and freshly cooked fruit.

1/2 pint fresh blueberries
1 tablespoon granulated sugar
1/4 cup reduced-fat creamy peanut butter
1/4 cup plain, fat-free Greek yogurt
1 tablespoon ground flaxseed
4 slices whole wheat or whole grain bread

Place the berries and sugar in a small saucepan. Cook over high heat until the berries begin to pop and a thick sauce starts to form. Add 1 or 2 tablespoons of water if the mixture starts to stick to the pan.

Meanwhile, stir the peanut butter, yogurt, and flaxseed together in a small bowl. Toast the bread, top with the peanut butter mixture, and dot with the blueberry “jam.”
