Breakfast for Dinner

You can make breakfast for dinner and savor all those filling breakfast and brunch foods, but if you do it smart there is no reason to skimp on the nutrition. I’ll show you ways to round it out so it can be a more complete meal that you can serve for dinner, so you can still be the hero when everyone at the dinner table says “hurray”!

Scrambled Eggs and Dogs

Whisk 2 whole eggs and 4 egg whites in a large bowl with a pinch of salt and pepper. Scramble the eggs with 2 nitrate free turkey dogs, chopped along with two handfuls of baby spinach.

Fast and Easy Egg Souffle

Whisk 2 whole eggs and 4 egg whites in a large bowl with a pinch of salt and pepper. Whisk in 1/2 teaspoon baking powder. Divide the egg mixture between 4 small ramekins or coffee cups. Sprinkle the top of each with two cherry tomatoes cut into quarters and one tablespoon of grated part skim mozzarella. Bake in a preheated 400°F oven for 8 to 10 minutes until the eggs are cooked through and the top is puffed. Add a pre-washed side salad with low fat dressing and you have a meal.

Waffles or Pancakes

Find a good quality waffle or pancake mix that is made with 100% whole grain flour. Make a healty topping that has berries and protein-rich yogurt instead of using tons of sugary syrup. Combine 2 cups of thinly sliced strawberries, with the zest of one lemon and the juice of 1/2 lemon, plus one teaspoon powdered sugar. Place 1/2 cup non-fat or reduced fat Greek yogurt in a small bowl. Add 1/2 teaspoon vanilla and one tablespoon powdered sugar. Mix well and top your waffle with the strawberries and a dollop of the Greek yogurt mixture.
