More Really Big Healthy Snacks

Artichoke PizzaI‘m back with another installment of the really big healthy snack. Now that I’ve been in the swing of my slightly tweaked, new exercise routine with more running, I’ve needed to supplement more with snacks. But just as the weather changes so does hunger, and it seems that my hunger has calmed throughout the day.

But that doesn’t mean that I’m not hot on the trail of the next really big snack that’s calorie friendly too!

Turns out we went out last for a late dinner, at Cucharamama, and they’ve got the most amazing Serrano ham pizza that they bake in their own wood burning ovens, so I didn’t want to miss out.

But as soon as the first sharp hunger pang hit, I headed to the fridge. Shuffling around in the fridge, second shelf I found left-over creamy artichoke dip. Keeping with the pizza theme, here’s a fast artichoke pizza, that you can make in a toaster oven:

Spread 1/4 cup artichoke dip over one small whole wheat pita, and top with a slice of Swiss or Pepper Jack. Toast for 1 to 2 minutes until the cheese is melted. Enjoy!
