Scalloped Potatoes

Scalloped potatoes are one of my favorite fall and winter dishes. Just the smell of them transports me back to my Granny’s kitchen where she always had a pairing knife and cutting board handy, ready to chop vegetables for her home-cooked meals.

Granny’s Holiday Baking Recipes & Easy Holiday Cookies

Granny is an extremely skilled baker who loved to spoil her family with home-made holiday treats. She would start baking three weeks before Christmas to be sure that we had plenty of holiday cookie varieties, teaching me a few of her insider baking tips and tricks along the way.

Pumpkin Bread Pudding

Moist pumpkin and rich chocolate make an outrageous dessert pair. Pumpkin has tons of beta carotene, an important antioxidant and the chocolate has flavenoids which also boost the levels of antioxidants in this bread pudding.

Halloween Ideas: Coco Bats

You will need a bat shaped cookie cutter to makes these crunchy crisp chocolate bats are perfect for a healthy Halloween! The kids will love ’em because they’re chocolate sugar cookie dough, but I like them since they have whole wheat flour and are lower in fat than a traditional sugar cookie.

Pumpkin Peanut Butter Cookies

Purchase a pumpkin shape cookie cutter to make these fanciful whole wheat trick or treats for Halloween. The molasses adds vital iron and other minerals to these whole grain goodies that have an extra helping of fiber.

Cherry Upside-Down Cake

As a kid, I hated upside down cakes covered with masses of sticky glazed pineapple. Feared by many, it always popped up on buffet tables at family gatherings. I’ve never been a big fan of canned fruit since, so my upside down version is made with a thick, rich homemade filling of fresh cherries that is simple and superb.

Double Chocolate Zucchini Brownies

My granny always had so much leftover zucchini in her garden, it was a challenge to use it all. Zucchini is very high in water and fiber content. It’s the perfect way to moisten brownies without adding extra fat and get extra fiber in your diet … and this recipe is consistently among the most downloaded ones here on SkinnyChef.com

Parchment-Wrapped Fish

Parchment paper sounds fancy, but it’s really just paper you can use in baking. I use it to construct a little paper bag to make an ultra healthy, super fast fish bake that is a tradition in French cuisine. You can always use aluminum foil in its place, however fish always tastes better to me cooked in parchment.
