Don Juan Olgado’s Birthday Cake

This traditional South American cake is especially popular for birthday celebrations. I love dulce de leche, a rich, gooey milk caramel sauce that just happens to be low in fat. Try dipping wedges of crispy apple for a sweet low-fat snack. You can purchase dulce de leche in a store that carries Latino groceries or make it yourself – see my dulce de leche recipe.

Devil’s Food Cake

This cake might seem like the devil’s work, but the ingredients are angelically light! Indulge yourself with this not-so-naughty chocolate cake!

Fudge with Pecans

Every family has a favorite fudge recipe. This fudge still has that chocolately, rich smoothness but is much lower in saturated fat and a snap to make, no candy thermometer necessary.

Sweetheart Cupcakes

Make these cupcakes for your loved ones to help protect their heart. The oat flour helps to control cholesterol and beets have antioxidants to protect arteries. Give them a sweet treat that you can feel good about.

Hungarian Nut Roll

Hungarian nut roll is one of my family’s most treasured recipes – but this version has less fat since it’s made with skim milk and low-fat margarine. Fresh yeast is usually found in the dairy section, but you can substitute with 2 (.04 ounce) packets of dry yeast

Pizza Dough

I’ve tested so many different pizza dough recipes and this one is a combination of them. A great pizza has a crispy outer crust with a soft textured dough on the inside, baked perfectly in the hottest of ovens. If your oven doesn’t go up to 500° F or higher, I suggest purchasing an inexpensive pizza stone. Use your creativity to top this tasty crust. If you are using meats, seafood, or dense vegetables, pre-cook them before topping your pizza.

Leek Quiche

I tasted this elegant, rich quiche while traveling in France. I’ve lightened this version by substituting with some low-fat dairy products. It’s a healthier option for celebrations or holidays and if you need a change from the traditional Thanksgiving dishes, this is a great substitution.

Concord Grape Pie

This is one of the most unique family recipes I have. I’ve never seen or tasted it anywhere except for in my Granny’s kitchen. My granny had a small grape arbor, covered with concord grapes and fuzzy yellow bumble bees that were attracted to the honeyed scent. Every September she would pick the grapes to make jams, juice, and pies. When I serve it, people think it’s blueberry pie but are really surprised by the intoxicating grapey first bite!
