Spicy Sausage and Spinach Lasagna

Spinach is extremely nutritious and versatile. I incorporate it into dishes whenever I want to increase nutrition by adding vegetables. No-boil lasagna is a time saver but it makes this lasagna dry. If you decide to use it, soak it in hot water for 10-15 minutes first.

Roasted Lemon Chicken à la Nicoise

Nicoise is a classic French preparation that usually incorporates olives. The term means ‘prepared Nice style’, coming from Nice, France. Roasting chicken this way tenderized the meat and infuses it with the fruity richness of olives

Teriyaki Chicken Salad

Fresh pear adds a juicy sweet component to this Asian-style lunch classic. Mix in a cup of whole-wheat pasta to make it a complete meal.

Israeli Chicken Cutlet with Arugula Salad

Za’tar is a dried herb mix that is popular in Middle Eastern cuisine. Za’tar is usually made by grinding hyssop leaves into a powder, then mixed with other ingredients such as toasted sesame seeds, sumac, and sometimes cumin.

Curried Chicken Salad

Korma and Madras curries are different variations of dried Indian spice combinations. Traditionally, all great Indian cooks take whole spices, toast them, and grind their own freshly roasted curry powder. For convenience sake, you can purchase the powder pre-made. Korma usually contains a mixture of spices like coriander, aniseed, cumin, cinnamon, star anise, and cloves. It has a mild, savory flavor with a touch of sweetness. Madras has added heat from dried chilies and usually contains coriander, turmeric, cumin, and fennel.

Chicken Saltimbocca

I call this ‘jump in your mouth’ chicken, since that’s the meaning of Salta-in-bocca! It has jumped into quite a few mouths since I started cooking it. This low-fat version is as delicious as the full-fat one since it’s flavored with fresh sage and prosciutto and it has become a favorite among private chef clients.

Chicken and Vegetable Stir-fry

Most kids love eating take-out Chinese from those neat paper cartons. Here’s a heart-healthy version you can prepare at home that still has that great savory flavor! Take out the chicken to make this vegetarian.

Grilled Chicken Caesar Salad

I love the tart and tangy flavors of the traditional Caesar Salad. My version still has all the flavor minus the fat you’ll find in most restaurant or store-bought Caesars! Leftovers make a perfect quick and healthy office lunch.
