Pumpkin Peanut Butter Cookies

Purchase a pumpkin shape cookie cutter to make these fanciful whole wheat trick or treats for Halloween. The molasses adds vital iron and other minerals to these whole grain goodies that have an extra helping of fiber.

Mini Cashew Cookies

Nut butters are great for making baked goods and sauces. I love the sweet mellow taste of cashews, but if cashew butter is not in your budget, replace it with peanut butter instead.

I call these cookies ‘Irish’ because their green hue makes them perfect for St. Patty’s Day. Instead of using food coloring, I mix in anti-oxidant green tea powder that helps make these low-sugar cookies even healthier!
