Parchment-Wrapped Fish

Parchment paper sounds fancy, but it’s really just paper you can use in baking. I use it to construct a little paper bag to make an ultra healthy, super fast fish bake that is a tradition in French cuisine. You can always use aluminum foil in its place, however fish always tastes better to me cooked in parchment.

Orange Beet Mimosa

Orange juice makes everything sweet and sunny. Beets add jewel-like color as well as added nutrition to this classic brunch drink.

Quinoa Risotto

Risotto is prized for its creamy texture and rich taste. Quinoa is naturally creamy and makes a lighter, whole grain version of this popular Italian comfort food. Spinach adds extra nutrition and flavor.

Pineapple Salsa

Sweet, salty, and spicy, this pineapple salsa is a great way to dress up any plain jane dish. If you prefer more heat in your salsa, you can add one chopped jalapeño.

Nut butters are great for making baked goods and sauces. I love the sweet mellow taste of cashews, but if cashew butter is not in your budget, replace it with peanut butter instead.

I love Parmesan but if you’re on a tight budget tangy Romano cheese is an ideal substitute at half the price. I use reduced fat cream cheese in place of heavy cream that usually appears in the traditional version.
