Pineapple Salsa

Sweet, salty, and spicy, this pineapple salsa is a great way to dress up any plain jane dish. If you prefer more heat in your salsa, you can add one chopped jalapeño.

Mini Cashew Cookies

Nut butters are great for making baked goods and sauces. I love the sweet mellow taste of cashews, but if cashew butter is not in your budget, replace it with peanut butter instead.
 

Snow Peas with Orange Zest and Garlic

Anyone who has minimal cooking experience will like this recipe – even my husband, the reluctant cook. Just be sure not to overcook the snow peas.

Turkey Bolognese

I love Parmesan but if you’re on a tight budget tangy Romano cheese is an ideal substitute at half the price. I use reduced fat cream cheese in place of heavy cream that usually appears in the traditional version.

Creamy Spinach Dip

Artichokes make this creamy spinach dip chunky and satisfying without adding loads of extra fat that the traditional versions has. Artichokes are also high in fiber and make for an excellent salad dressing.

Refried Beans with Bacon

Creamy refried beans are a perfect side dish for any Mexican main course. Beans and smoky bacon are a delectable combo but I use turkey bacon to keep them light and low-fat.

BLT Pasta

I created this recipe for my friend, the Fresh Grocer, Tony Tantillo. It’s an Italian spin on classic American flavors of bacon, lettuce, and tomatoes. I also added fresh fennel for extra flavor and texture.

Balsamic Asparagus

Asparagus is the quintessential spring vegetable but is easy to find year-round. Balsamic mixed with chicken broth and cornstarch adds a sweet-and-sour flavor to this dish. Top with grilled, sliced chicken to make it a meal.
