Meatloaf Stuffed With Spinach

Meatloaf Stuffed With SpinachMeatloaf is one of those blue-plate specials that is still on my list as a comforting, satisfying meal that’s perfect for winter weeknights. I like to shake up the flavor by adding new ingredients, or even stuffing it with something surprising, like gooey mozzarella and fresh baby spinach.

When I posted this recipe last week in my column on AOL’s Slash Food, readers’ reactions ran across the entire spectrum, so I’d be interested in your thoughts in the comment section below…

  • “I’m going to try this recipe, it looks delicious ! Another good recipe to try is Ann Landers Famous Meatloaf, except I omit the bacon and just spoon ketchup on top.”
  • “On a never-ending search for healthy new recipes, I made this last night for dinner. I followed the recipe EXACTLY, and my hubby and I have both voted to add it to our “repeat” list!”
  • “This recipe is fantastic. I love meatloaf especially with mashed potatoes & gravy & sweet corn!!!”

  1. I made this for my family and it was delicious! We had some left over and ate it the next night and we all agreed it tasted even better. I can’t wait to make this again!

  2. Your cookbook revolutionized my cooking which I super appreciate as a busy newlywed. 🙂 I can’t wait to try this recipe! Can I make it in a crockpot? Any tips for that?

    • Thanks Liberty and many congrats!

Mmm I’ve never tried meatloaf in a crockpot, I don’t think it would brown on top but other than that it should work!

  3. Thanks, Jennifer! My mom has made meatloaf in the crockpot before and here is how she suggested to do it (so you can give it a shot): 45 mins on high then 6-8 hrs on low. 🙂 I’ll let you know if it gets brown and yummy on top!

  4. Looks like the meatloaf recipe is not there anymore. Can you post it on this page? I’m very curious to see what you are doing
