Papaya Lime Cooler


  • 1/4 cup sugar
  • 1/4 cup boiling water
  • 1 cup cubed papaya
  • 1 tablespoon lime zest
  • 1/2 cup fresh lime juice (about 5 limes juiced)
  • 1/4 cup fresh mint, sliced, plus two whole sprigs for garnish


  • In a blender or food processor, blend sugar and water together. Blend in remaining ingredients and serve in two tall ice tea glasses with a sprig of mint.
