Most kids love eating take-out Chinese from those neat paper cartons. Here’s a heart-healthy version you can prepare at home that still has that great savory flavor! Take out the chicken to make this vegetarian.

Grilled Chicken Caesar Salad

I love the tart and tangy flavors of the traditional Caesar Salad. My version still has all the flavor minus the fat you’ll find in most restaurant or store-bought Caesars! Leftovers make a perfect quick and healthy office lunch.

Spiced Hot Cocoa

This low-fat version of hot cocoa has a Mexican twist! I add lots of spices and a hint of chili pepper to give it that extra warm flavor.

Cardamom Ice Cream

I created this recipe for my friend Lorna Sass, award-winning cookbook author and serious jazz enthusiast. Since she is such of fan of cardamom, I wanted to offer her a special treat when I invited her over for dinner one night. In this recipe, the cardamom is mellowed by the addition of the bittersweet chocolate chips.

Almond Tea Cake

I’m a big cake fan, though I only indulge on special occasions! Serve this low-fat, protein-packed cake with Spiced Hot Cocoa in the winter or chilled mint ice tea in the spring! Looking for a light treat for mother’s day? Mom will grin when you tell her that this delicious cake is low-fat!

Mac and Cheese

An American classic that hits the waistline and hips pretty hard! My version softens the blow of cheese by mixing in non-fat cream cheese and parmesan.

Healthy Buttermilk Chicken Fingers

This is one of my most popular recipes, with adults and children alike! I love the taste of crispy chicken but prefer this version for a healthy everyday meal. I soak my chicken in low-fat buttermilk to tenderize it first, giving it the same tender texture of the deep fried version. If you have a busy schedule, you can soak the chicken overnight and purchase seasoned breadcrumbs instead of making them. Little folk love to eat with their fingers, and this chicken is moist and tender for small mouths!

Pear Hazelnut Muffin

Pears are plentiful in the fall. If you happen to have a few bruised pears at the bottom of your fruit bowl, this is a great way to rescue them! If you don’t have hazelnuts, almonds work just as well. I store all my nuts in the freezer to keep them from becoming rancid.
