These fruity pops are sweet since they combine two antioxidant rich foods, blueberries and spinach. Watch Better TV clip featuring this recipe!
Serves 8
1 1/2 cups fresh blueberries
1 1/2 cups baby spinach leaves
3 tablespoons blueberry jam
Blend all ingredients in a blender or food processor until smooth. Pour into popsicle molds or freeze in an air-tight container 3-4 hours or until firm.
Serve with Buttermilk Chicken Fingers or Sauteed Spinach.

We are making these this week. Can you tell me if there is any other fruit that will go well with the spinach? I have some picky eaters who do not like blueberries.

Mango is amazing with spinach, although the popsicles will come out mint green. Just add a 1/4 teaspoon mint extract and a few bittersweet chocolate chips for your own “mint chocolate chip” pops….
