Here are some strategies for getting more superfoods like greens, beans, and berries onto your plate this summer.

Apples, The Unsung Superfood!

I consider apples to be the “unsung” heroes of the superfood world, especially when it comes to heart health. Apples contain a variety of phytochemicals, including quercetin, catechin, phloridzin, and chlorogenic acid, all of which are potent antioxidants. Turkey Chili

This turkey chili makes a tasty, high-protein meal, because it’s made with lean ground turkey. Get creative with the topping, a tablespoon of your favorite cheese, salsa, or sour cream. Beans add a good dose of fiber but if you want to ramp up the nutrition even more, add a handful of your favorite green, such as kale or spinach during the last minute of cooking.

Gluten-Free Lasagna

This is no ordinary lasagna, it’s gluten-free and fortified with two of my favorite superfoods, mushrooms and kale. Gluten-free diets can be unhealthy when you don’t include veggies, but this one dish meal has it all.
