Everyone always wonders what makes these chicken finger so crisp and special. I coat them with a mixture of cooked quinoa and whole-grain breadcrumbs. It’s a healthy twist that kids love and adults request. Quinoa, a seed from South America, can be found in health food stores and even in some national grocery chains. It is a cinch to cook and takes only 15 minutes on the stove top.
While Sara tended to the chicken, I tossed together a super-fast side dish that is the ideal match for chicken: garlic broccoli. Broccoli drenched in fresh lime and seasoned with garlic and ginger will be a hit for anyone who loves Chinese take-out.
