Meatloaf isn’t pretty to look at, but it’s funny how many people just love it all the same. When I was a kid, I actually preferred the leftovers. It made the best sandwiches and always seemed more moist and flavorful after a night in the fridge.

Hey Kim, thanks for the note. The only difference I saw was the amount of soy sauce. It will work either way with one tablespoon or 2 teaspoons, the sodium count will be different tho!
Have you made these in cupcake tins? I like to do that by doubling a recipe and freezing the 2nd batch, and usually some of the first batch, for other quick meals.
