Papaya is high in vitamin C and a good source of fiber. It’s cool, soothing fruit blends up smooth, ideals for mixed drinks and smoothies.
Serves 2
1/4 cup sugar
1/4 cup boiling water
1 cup cubed papaya
1 tablespoon lime zest
1/2 cup fresh lime juice (about 5 limes juiced)
1/4 cup fresh mint, sliced, plus two whole sprigs for garnish
In a blender or food processor, blend sugar and water together. Blend in remaining ingredients and serve in two tall ice tea glasses with a sprig of mint.
Serve with Cucumber Kiwi Gazpacho or Herbed Fish.
