Smooth mashed potatoes are easy to make when you follow a few easy steps. Always mash the cook potatoes when they are still hot. Make sure the milk is warm, cooling down the potatoes can cause the starch to thicken and get lumpy.

Ingredients
Serves 8
2 pounds Yukon gold potatoes, (about 6 large potatoes), peeled and cubed
2 tablespoons butter, room temperature
1 cup non-fat, skim milk, warmed
1/2 teaspoon salt
Directions
Place the potatoes in a large saucepan with cold water to cover. Place over high heat and bring to a boil. Reduce the heat to low and cook 20 to 25 minutes, or until fork tender. Drain.
Place the butter, a third of the milk and a third of the potatoes in a large bowl. Mash with a hand held masher until smooth. Repeat with potatoes and milk, and mash again. Finish the remaining potatoes and milk and season with the salt. Serve immediately.
